This recipe is easy-peasy and tasty as can be, it will serve two heartily.
1lb steaks of choice (the value steaks work well for this)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
8oz baked potato salad
2 slices of flatbread
1/4 cup cooked bacon pieces
1/3 cup shredded grass fed irish white cheddar (i.e. a very mild white cheddar)
Set heat to medium. Coat bottom of pan in olive oil. Salt, and pepper, cook until 145°F (for medium-rare). Microwave potato salad for 1–2 minutes or until warm. Slice steaks thinly. Spread potato salad on flatbread, top with steak slices, bacon and cheese, salt and pepper to taste. Cut in half or slices. I added a little dollop of the leftover potato salad in the center.
Optional, serve with sliced and salted tomatoes and green onions.
