3/4 cup butter milk
1 cup whole wheat flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Don’t have buttermilk on hand? Combine 2 tablespoons of white vinegar with 3/4 cup of milk, set aside for 5 minutes, then add 2 tablespoons of melted butter.
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg into buttermilk. Pour the wet ingredients into the flour mixture and whisk until lumps are gone.
Heat a non-stick skillet over medium heat, do not use butter or cooking spray, just make sure to wipe the pan clean of leftover particles between pancakes. Butter or cooking spray can cause the pancakes to brown unevenly or even burn in spots. Pour 1/4 to 1/2 cupfuls of batter onto the skillet, and cook until bubbles appear. Flip and cook until browned on the other side.
Top with fresh fruit for a tasty breakfast.
