Pre-heat oven to 350 degrees. Lightly oil a muffin pan with EVO. Place two pieces of thin ham into each of 6 cups. Whisk 4 eggs with 1 Tbs of parmesan cheese, 1 Tbs of milk and seasonings. Pour each cup half full of egg mixture. Sprinkle the tops with the remaining parmesan cheese. Place in oven for 15-20 minutes or until egg mixture is cooked.
*Cover with another thin slice of ham before cooking.
*Add in finely chopped peppers, mushrooms and/or onions.
*For a spicier quiche, try pepperoni instead of ham.
