Last night I wanted something to do with salad for dinner and had chicken legs thawed waiting to be cooked. I could have gone with chicken legs and side salad, but I wanted to make it a little more special. This is what I came up with:
Green Leaf Lettuce
Sliced Red Onion
1-2 Chicken legs per person
1-2 Slices of bread per person
2 Tbs butter
Season chicken legs, spray lightly with olive oil, brush on BBQ sauce baking at 400 degrees for 15 minutes on each side. When finished use a knife to slice chicken off the bone and toss with more BBQ sauce.
On the lower rack of your oven while the chicken is cooking bake slices of bread at 400 for 10 minutes.
Take bread out and cut it into manageable bites. Melt butter in skillet on low heat, be careful it burn easily if it gets too hot. Sprinkle with garlic powder. Layer bread chunks on skillet, cook for 5 minutes on each side.
Combine veggies, cheese, chicken and croutons in a large bowl, toss and add ranch dressing sparingly so as not to overwhelm the other flavors.
